Level 5 programme
Hospitality is a fast-paced, exciting and challenging industry which seeks qualified and experienced people to manage and work in their hotels, bars, cafes, restaurants, resorts, cruise ships and many more, both in New Zealand and overseas.
The National Diploma in Hospitality (Management) is a two-year qualification offered at the Auckland Campus, beginning in February. The variety of management opportunities is enormous and our diploma programme covers the essential skill base of: Customer Service functions, Food Management, Beverage Management, Business concepts and Communication in Management.
As well as gaining the Diploma, our experienced and friendly tutors ensure you gain industry specific certificates, complete work experience and an internship plus have plenty of practical experience in our purpose-built training facilities which provide cafe, lunch and dinner productions.
Students on this programme will receive work experience in the first year and a 3-month internship in the second year, building relationships with potential employees that often lead to job offers after your studies. This means you will go to actual workplaces and gain an insight and knowledge into these industries.

Course Outline
Customer Service: You will learn how to deliver excellent customer service to a range of customers, including providing specialist support for guests with special needs. You will learn to effectively deal with customer complaints and provide a safe and secure environment for guests
Accommodation Services: You will be able to provide reception services to guests, which includes an information booking service and a reservation booking system. You will gain be able to process cash and foreign exchange transactions for guests
Food Safety: You will gain a thorough understanding of food safety methods and will be able to implement and supervise a food safety programme within the industry
Food and Beverage Services: You will learn all about Food and Beverage services, including seating and taking orders for customers in a restaurant. You will be able to prepare and serve various alcoholic and non-alcoholic beverages and create exciting cocktails
LCQ (License Controller Qualification): You will gain the knowledge through practical and theory training to perform the duties of a licensed duty manager in a licensed premises
Human Resources: You will be able to participate in a staff selection process including recruitment and selection
Computer Training: You will learn to use computer systems in a modern business, including MS Office software and basic networking and keep updated with emerging technology
The Tourism Industry: You will learn all about the Tourism Industry, which is one of the fastest growing industries in New Zealand's and you will be able to understand the areas which influence its structure and development
Small Business Management: You will understand what it is to run and operate a small business, including ownership options, financial structures and marketing
Food & Beverage Management: You will gain advanced knowledge and management skills in Food and Beverage with a special focus on the purchasing and control systems used by the industry
Communication: You will be able to practice effective business communication skills required for participating in formal meetings, managing interpersonal conflict and taking on a leadership role to a team of employees
Accommodation Management: You will have the management skills and knowledge to implement and manage the maintenance of premises within the Hospitality industry
